I have always been a food lover. I love to eat, cook, etc. Anything to do with food I love. I especially love southern food, it is my downfall. I come from a southern family. My grandma showed me how to cook a lot of her recipes. Every potluck or get together I go to I always cook one of her recipes and everyone always loves it. They are always asking me how did you make this, and as you all know if you are familiar with the south there is no set recipe it's a little of this and a little of that so it's always hard to share those certain recipes. Over the years I have actually worked out that little issue and I would like to share one of my favorite recipes with you all today. It is my grandmas mashed potato salad. It is the only way I like potato salad. I hope you all enjoy.




Mashed Potato Salad


Ingredients:


Directions:

  1. Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 20 minutes. Drain and transfer potatoes to a large bowl.
  2. Mash potatoes with a potato masher. Stir in onion, eggs, celery, pickles, salt, and black pepper. Mix mayonnaise, pickle juice, and mustard in a separate bowl; pour over potatoes and mix well. Cover and refrigerate at least 1 hour before serving.
